Fastest meal idea for your leftover rice

Fried Rice and Eggs

The fastest, cheapest, healthiest meal I know

Ingredients
  

  • 1 Cup cooked rice brown (preferably) or white, basmati, etc
  • 2 tbsp neutral oil olive works, too. Try some toasted sesame oil
  • 2 eggs scrambled
  • 2 scallions chopped
  • 1 tsp soy sauce or tamari to taste
  • salt and pepper to taste

Instructions
 

  • heat oil in skillet til hot
  • add oil(s) and heat
    add cooked rice and stir to coat with oil. heat through, being careful not to burn
    push rice to one side of skillet
    add scrambled eggs to emptied side of skillet and use spatula to scramble (adding the eggs directly to the rice makes it pretty mushy)
    when eggs are to desired consistency or texture mix the rice in with the eggs
    add scallions, salt and pepper

Additions

  • This dish lends itself easily to additions of vegetables and other oriental type flavors. If you have pre-cooked vegetables, they can be added. A splash of umeboshi vinegar is wonderful. Toasted sesame seeds add some crunch and good flavor.
